Light & Fluffy Pancakes

Pancakes are big deal in our house. I make these pretty much every weekend on our down day. Constantly rushing around to school, work, sports and activities, we always like to have one day where we all get to enjoy a big breakfast together. What better way to do that then with a delicious stack of light and fluffy pancakes with your favorite toppings and warm maple syrup!

Prep Time: 10 minutes / Cook Time: 30 minutes

Yield: about 12 Pancakes (depending on your pancake size)

Ingredients:

  • 3 cups of all-purpose flour (replace with your choice)
  • 2 1/2 tablespoons of baking powder
  • 2 tablespoons of sugar
  • 3 cups of oat milk (replace with your choice)
  • 1/2 cup of grapeseed oil or olive oil
  • 3 tablespoons of butter, melted (replace with your choice)
  • 1/4 cup of water, set to the side for later
  • Optional~ toppings to add into or top of your pancakes (chopped fruit, chocolate, etc.)

Instructions:

  • Melt your butter and set aside
  • In your electric mixer add your dry ingredients (flour, baking powder, sugar) and Mix well
  • Make a hole in the center of your dry ingredients and pour in your wet ingredients (milk, oil, and melted butter)
  • Mix until well combined and there are no lumps.
  • If your batter seems a little thick and won’t pour into your pan easily, take the 1/4 cup of water and add a tablespoon size amount at a time while you continue to mix. Check consistency as you go to make sure you aren’t adding in too much. **You want your batter to maintain thickness and pour out of your ladle.
  • Lightly butter your pan and set to medium low heat. I use my flat top and it is life changing!
  • Scoop the batter into the pan, use about a 1/4 cup for each pancake.
  • If you are going to add anything to your pancakes (chocolate, chopped fruit, etc), now is the time before flipping to cook the other side.
  • When you see a bunch of air bubbles around the edges, it is time to flip and cook the other side
  • Cook the other side until golden
  • Top with butter, maple syrup.. whatever you desire!
